The Esalen Institute in Big Sur.  I passed by this place when I was there.  The next time I go up to Big Sur, I hope to be a student enrolled in their wonderful workshops!

The Vipassana Center in Twenty Nine Palms (29= 2+9=11). This place is a 10 day retreat where you will meditate all day and have no communication with the outside world.  You will be challenging yourself to isolate your mind.  You live just as a monk would.  Even better, IT'S FREE!
